This month’s Cook Book Club hosted by Jo of Brookford Kitchen Diaries has as it’s theme a one-pan wonder, a tray bake or a sheet bake, a dish where you just pile everything in together, stick in the oven, and serve dinner. Not having access to my cookbooks, I decided to do what I did in Hamburg and buy a couple of cooking magazines (featured image) to see if they could offer up any ideas. While there were a lot of good things – more ideas for asparagus, a white chocolate kladdkaka topped with rhubarb compote – there were no tray bakes. So I turned to Herr Google and found this recipe for an all in one dish using chorizo.
Set your oven to 220 C. Chop up a courgette (or zucchini, which ever you prefer) and a red capsicum into big chunks. Slice some small new potatoes into wedges then toss all the veggies into a suitable dish, covered with greaseproof paper, coat with olive oil and seasoning.

Pop into the oven for about 30 minutes until the potatoes are cooked. The oven in this flat gets very hot, but you know your oven and how it behaves.

I found this chorizo sausage which was ideal for this dish, but obviously you could add what you have locally, or really any time of spicy sausage you like. Of course, if you are buying sausages in their skins, you will need to remove the casing before crumbling the meat to add to the dish. Add the sausage meat on top of the veggies and cook for about 10 minutes. If the veggies are looking a bit too brown, cover with foil.

Once cooked, remove from the oven, sprinkle on some feta and parsley and serve. Verdict? Very good and so easy. Make again? Yes, and really you could use whatever veggies you like and have to hand, but this made a very good mix with this sausage.

Next month….well, I will be back in Wellington, and the idea is to go into our collection and find an oldie but a goodie. Maybe something you haven’t cooked from for ages, something you’ve forgotten was there. The date is 17 June, and as we land back on 13 June (all being well), I’m not quite sure what will be on the table. Let’s see!

Baked vegetables have been a longstanding go-to recipe for me but I’ve never added meat or sausage to them. An good idea for a one-pan dinner. Cheers.

I’m very partial to one dish meals and love roasted veg. I like to add halloumi with courgettes, carrots and peppers. And BNS with red onion wedges, garlic and chicken thighs with a honey and lemon dressing and rosemary sprig is a favourite.
