What’s on your plate: December

With summer produce coming into the shop, the food we are eating is shifting to tomatoes, capsicum, asparagus and crisp lettuces. One of my favourite books I turn to again and again is Diana Henry’s From the Oven to the Table, so I turned to it again when I wanted to use some of the things I had around. I decided on salsiccia con patate e pomodori al forno – sausages baked with potatoes, capsicum and tomatoes.

I used the Argentinian chorizo from El Jefe, some gorgeous new potatoes, capsicum from the Wonky Box delivery, and of course, tomatoes, an onion, garlic and some fennel seeds.

The recipe is very simple – cut up the sausages into pieces and brown, then remove from the pan. Add the onion, cooking until just turning golden then add the potatoes, galic, capsicum and seasoning. Return the sausage to the pan, then pop into the oven at 190C for about 20 minutes. Give it a good stir, then top with the sliced tomatoes and pecorino romano cheese, baking for a further 30 minutes or until the potatoes are cooked.
