Spring is here, and the wonderful produce of the season is appearing: asparagus, fresh peas, the first strawberries and beans. I particularly love fresh peas, opening the pods, popping out the little green delights.

With Karl away, and me having a work trip to Auckland on the cards, there was not much chance to experiment in the kitchen at the weekend. I just grabbed a handful of crisp lettuce, topped it with some left over green beans, roasted asparagus, lots of spring peas, and then added some goat cheese and good tuna from Sirena along with a simple dressing and a few capers.

Before eating, I shredded some basil leaves over the top, and sat down to enjoy a real spring feast.

This well be entered in the What’s on Your Plate blog challenge hosted by bloggers Widow Badass and Retirement Reflections which happens on the first Wednesday of the month.

Hi Barbara, this brought back childhood memories for me. We would sit on the back step and help Mum peel the peas. I think we ate more than we put into the bowl for cooking LOL :). This is certainly a simple dish but I love all the ingredients so it will be on my list for sure. Thanks for sharing with us at #WeekendTrafficJamReboot. I have selected your post as one of my favourites to be featured next week. Have a lovely week. x
